Triple Berry Cobbler
There’s something about holidays that get us in the mood to cook. Fourth of July means hot dogs and hamburgers, potato salad, and OMG cobbler!
Peach cobbler has been a favorite of mine since childhood but over the years I’ve mixed it up a bit. My first variation was a blackberry cobbler and that turned out fine but I recently tried using a mixture of three berries. They get so syrupy and sweet. The consistency of the whole thing is just so good. Rich and super sweet! Perfectly paired with an ice cold glass of milk.
Ingredients
2 cups fresh berries, washed and sliced
1 1/4 cups sugar, divided in half
4 Tbsp butter
3/4 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
Mix berries and half of sugar in a medium bowl.
Let stand until sugar has completely dissolved and formed a juice.
Set oven to 350 degrees.
Put butter in a deep baking dish and melt in the oven while it is pre heating.
Stir remaining ingredients into a batter.
NOTE: Before proceeding to the next step, please remember the dish is still hot!
Pour the batter mix over the melted butter. Do NOT stir!
Then pour the berries and juice over the batter. Do NOT stir!
The berries will sit on top as shown. They will bake down into the bottom as it cooks.
Bake at 350 for 30 minutes or until golden and bubbly.
Serving suggestions – Add a scoop of vanilla ice cream or home made whipped cream.
